In a large bowl, mix ground beef, eggs, and breadcrumbs, 1/3 C parmesan, 1 Tbsp garlic paste, 1 tsp herb paste, salt and pepper. Shape into 18 meatballs
In a large skillet, heat 1/4C olive oil over medium heat. Add meatballs in batches and cook, turning occasionally until browned. Remove to plate and wipe skillet.
Add remaining 2 Tbst olive oil. Stir in tomato paste and remaining garlic paste, remaining herb paste and tomatoes. Salt and pepper to taste. Bring to a simmer.
Add meatballs to sauce. Cover and cook, stirring occasionally, 20 minutes or until meatballs are cooked through.
Place meatball in each roll with a small amount of sauce. Sprinkle with remaining parmesan and serve.
