peel and slice eggplant (1/4 - 1/2") slices. salt and roast at 400 degrees for 30 minutes.
mince eggplant slices in a food processor
add all ingredients and mix. form a "cup" of the mixture in your hand. stuff inside with mozzarella cheese. finish making a ball by adding additional mixture to top and form to shape.
fry meatball, until crisp on all sides and cheese is melted inside
