Combine all ingredients in a large bowl. Knead by hand or mixer for about 5 minutes, until the dough is firm, smooth, and supple.
Divide the dough into two balls. Cover and let rest for 15 minutes.
Place each dough ball between lightly greased sheets of parchment and roll to about 1/8 inch thick. Remove the upper parchment and let the rolled crust rest for 5 minutes.
Heat the oven to 425°F. If using a pizza stone, place it on a lower rack while the oven preheats.
Keep the rolled crusts covered and let them rest for another 20 to 30 minutes while the oven heats.
Prick any large bubbles with a fork. Prebake each crust for 5 minutes.
Add sauce, cheese, and desired toppings. Bake for another 8 to 10 minutes, rotating if necessary, until crisp and browned.
Notes
For the crispest result, use sauce sparingly and avoid wet or excessive toppings.
