Slow-Cooker Rustic French Onion Soup

A long-simmered slow-cooker French onion soup with dry sherry and Gruyère-topped baguette toasts.

Ingredients
  

  • 2 cups onions thinly sliced, 6 large
  • 1/4 cup butter melted
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon dried thyme leaves
  • 5 tablespoons all-purpose flour
  • 3/4 cup dry sherry
  • 1/4 cup water
  • 1 32-oz carton beef-flavored broth 4 cups
  • 20 baguette slices 1/2 inch thick, about 10 oz
  • 6 oz Gruyère cheese shredded, 1 1/2 cups
  • fresh thyme leaves if desired

Instructions
 

  • Spray a 6- to 7-quart slow cooker with cooking spray. Add onions, butter, salt, pepper and dried thyme. Whisk flour, sherry and water together until blended and stir into onion mixture.
  • Cover and cook on Low 9-10 hours, until onions are softened and deep brown.
  • Stir broth into slow cooker. Increase heat to High, cover and cook 10 minutes until hot.
  • Meanwhile, broil baguette slices about 3 inches from heat for 2 minutes, turning once, until lightly browned. Top evenly with Gruyère and broil about 1 minute longer, until bubbly.
  • Top each bowl with 2 cheese toasts and fresh thyme if desired.
