Slow-Cooker Rustic French Onion Soup
A long-simmered slow-cooker French onion soup with dry sherry and Gruyère-topped baguette toasts.
Ingredients
- 2 cups onions thinly sliced, 6 large
- 1/4 cup butter melted
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon dried thyme leaves
- 5 tablespoons all-purpose flour
- 3/4 cup dry sherry
- 1/4 cup water
- 1 32-oz carton beef-flavored broth 4 cups
- 20 baguette slices 1/2 inch thick, about 10 oz
- 6 oz Gruyère cheese shredded, 1 1/2 cups
- fresh thyme leaves if desired
Instructions
- Spray a 6- to 7-quart slow cooker with cooking spray. Add onions, butter, salt, pepper and dried thyme. Whisk flour, sherry and water together until blended and stir into onion mixture.
- Cover and cook on Low 9-10 hours, until onions are softened and deep brown.
- Stir broth into slow cooker. Increase heat to High, cover and cook 10 minutes until hot.
- Meanwhile, broil baguette slices about 3 inches from heat for 2 minutes, turning once, until lightly browned. Top evenly with Gruyère and broil about 1 minute longer, until bubbly.
- Top each bowl with 2 cheese toasts and fresh thyme if desired.
