Ingredients

  • 3/4 lb ground turkey
  • 1/2 cup onion chopped
  • 1 14.5 oz can diced tomatoes undrained
  • 1 8 oz can tomato sauce
  • 1 tbsp chili powder
  • 1 15.25 oz can whole-kernel corn drained
  • 1 15 oz can black beans drained and rinsed

Optional toppings

  • lime wedges
  • light sour cream
  • fresh cilantro chopped
  • salt and pepper to taste

Instructions

  • Heat a large skillet over medium heat. Add the ground turkey and chopped onion and cook for about 5 minutes, breaking up the turkey as it cooks, until the turkey is no longer pink and the onion has softened.
  • Stir in the diced tomatoes with their juices, tomato sauce, chili powder, corn, and black beans.
  • Bring to a simmer, cover, and cook for 10-15 minutes, until heated through and slightly thickened.
  • Taste and season with salt and pepper if desired. Serve with lime wedges, sour cream, and cilantro if using.

Notes

The documented Del Monte Foods version uses low-sodium kidney beans; this version substitutes black beans to match the remembered recipe.
