Southwestern Turkey Chili
A quick Southwestern-style turkey chili with tomatoes, corn, black beans, and chili powder. Adapted from the Del Monte Foods recipe we tracked down, using black beans as remembered.
Ingredients
- 3/4 lb ground turkey
- 1/2 cup onion chopped
- 1 14.5 oz can diced tomatoes undrained
- 1 8 oz can tomato sauce
- 1 tbsp chili powder
- 1 15.25 oz can whole-kernel corn drained
- 1 15 oz can black beans drained and rinsed
Optional toppings
- lime wedges
- light sour cream
- fresh cilantro chopped
- salt and pepper to taste
Instructions
- Heat a large skillet over medium heat. Add the ground turkey and chopped onion and cook for about 5 minutes, breaking up the turkey as it cooks, until the turkey is no longer pink and the onion has softened.
- Stir in the diced tomatoes with their juices, tomato sauce, chili powder, corn, and black beans.
- Bring to a simmer, cover, and cook for 10-15 minutes, until heated through and slightly thickened.
- Taste and season with salt and pepper if desired. Serve with lime wedges, sour cream, and cilantro if using.
Notes
The documented Del Monte Foods version uses low-sodium kidney beans; this version substitutes black beans to match the remembered recipe.
