
Eggplant Meatballs
Ingredients
- 1 each eggplant
- 1/2 C bread crumbs italian
- 2 each egg
- 1/3 C parmesan cheese
- 1/3 C mozzarella cheese
Instructions
- peel and slice eggplant (1/4 – 1/2") slices. salt and roast at 400 degrees for 30 minutes.
- mince eggplant slices in a food processor
- add all ingredients and mix. form a "cup" of the mixture in your hand. stuff inside with mozzarella cheese. finish making a ball by adding additional mixture to top and form to shape.
- fry meatball, until crisp on all sides and cheese is melted inside
- Serve with homemade marinara
