Ingredients
  

  • 4 8-ounce salmon fillets about 2 pounds total
  • salt and pepper to taste
  • 1 cup low-sodium chicken stock
  • 1/4 cup dry white wine
  • 3 tablespoons cold butter for whisking into the sauce
  • 1 large lemon cut into wedges, for serving

For the seasoned breadcrumbs

  • 1/2 cup breadcrumbs
  • 2 teaspoons dried oregano
  • 4 cloves garlic minced
  • 1 pinch crushed hot red pepper flakes
  • 1/4 cup Italian flat-leaf parsley minced
  • 1/4 teaspoon kosher salt
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons lemon juice

Instructions
 

  • Preheat oven to 400°F. Position one rack in the middle and another at the second-highest level.
  • Combine all seasoned breadcrumb ingredients. Taste and adjust seasoning as needed.
  • Arrange salmon skin-side down in a large baking dish (a 9×13-inch dish works well). Pat dry and season with salt and pepper.
  • Press a thin layer of breadcrumb mixture onto each fillet. Add a little more olive oil if the crumbs seem dry. Scatter up to 2 tablespoons of extra crumbs into the dish, then pour the chicken stock and white wine around the salmon.
  • Bake 15–20 minutes, until the salmon is cooked through and flakes easily. For a browner topping, move to the upper rack and broil 1–2 minutes, watching closely.
  • Transfer salmon to a serving platter. Whisk the cold butter into the pan sauce until melted, then pour the sauce around the salmon and serve with lemon wedges.

Notes

Keep the breadcrumb topping moist with olive oil so it does not dry out under the broiler. The pan sauce is excellent spooned over the salmon or served with bread for dipping. Refrigerate leftovers for up to 3 days and reheat in the oven or microwave.
