David’s French Onion Soup
A deeply caramelized onion soup deglazed with red wine and finished with beef broth, herbs, baguette croutons and melted Swiss cheese.
Ingredients
- 2 bags onions sliced
- 3 Tbsp olive oil
- 4 Tbsp flour
- 1 1/2 cups red wine
- 12 cups beef broth
- 3 Tbsp parsley
- 3 Tbsp thyme
- French baguette croutons for serving
- Swiss cheese melted, for serving
- salt and pepper to taste
Instructions
- Caramelize onions in olive oil. Drain onions if necessary if they produce too much liquid, and continue to caramelize.
- Add flour and cook for 5 minutes, stirring.
- Deglaze with red wine. Add beef broth and herbs. Simmer 20 minutes.
- Serve with French baguette croutons and melted Swiss cheese. Salt and pepper to taste.
