A deeply caramelized onion soup deglazed with red wine and finished with beef broth, herbs, baguette croutons and melted Swiss cheese.

David’s French Onion Soup

A deeply caramelized onion soup deglazed with red wine and finished with beef broth, herbs, baguette croutons and melted Swiss cheese.

Ingredients
  

  • 2 bags onions sliced
  • 3 Tbsp olive oil
  • 4 Tbsp flour
  • 1 1/2 cups red wine
  • 12 cups beef broth
  • 3 Tbsp parsley
  • 3 Tbsp thyme
  • French baguette croutons for serving
  • Swiss cheese melted, for serving
  • salt and pepper to taste

Instructions
 

  • Caramelize onions in olive oil. Drain onions if necessary if they produce too much liquid, and continue to caramelize.
  • Add flour and cook for 5 minutes, stirring.
  • Deglaze with red wine. Add beef broth and herbs. Simmer 20 minutes.
  • Serve with French baguette croutons and melted Swiss cheese. Salt and pepper to taste.
