  • 2.5 tbsp paprika
  • 2 tsp salt
  • 2 tbsp garlic powder
  • 1 tbsp black pepper

Butter Chicken

A super easy, full flavored butter chicken recipe that beats any restaurant or take out!

Ingredients
  

  • 1 tbsp olive oil extra virgin
  • 1 tbsp butter
  • 1 ea onion medium, diced
  • 1 tsp ginger grated
  • 3 clove garlic minced
  • 2 lb chicken breast cubed
  • 6 oz tomato paste
  • 1 tbsp garam masala
  • 1 tsp paprika
  • 1 tsp fenugreek
  • 1 tsp cumin
  • 1 tsp salt
  • .25 tsp black pepper
  • 1 C heavy cream

Instructions
 

  • heat large skillet over medium high heat. Add olive oil, butter, and onions. Sautee for 3-4 minutes. Add garlic and ginger and let cook for 30 seconds.
  • Add chicken, tomato paste and spices. Cook for 5-6 minutes, or until chicken is cooked through.
  • Add heavy cream and simmer for 10 minutes, stirring occasionally.

Notes

serve with basmati rice and naan

Goat or Lamb Curry

Simple yet delicious, this curry is an easy and wholesome meal to put together. This Indian lamb curry is made with onions cooked with spices for a rich, hearty dish that's perfect to make for a crowd.

Ingredients
  

  • 1 tbsp Cumin powder
  • 1 tbsp Ginger garlic paste
  • 2 ea Green chillies
  • 500 g goat or lamb
  • 3 tbsp olive oil
  • .5 tsp Pepper powder
  • .5 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Coconut powder
  • 1 tsp Cumin seeds
  • 2 tbsp Coriander powder
  • 2 tbsp Coriander leaves
  • 2 ea Onion chopped
  • Salt – to taste.
  • Water – as required.
  • 2 ea Cardamom
  • 3 ea Clove
  • 1 ea Cinnamon stick

Instructions
 

  • Heat oil in a pan, add cinnamon, green cardamom, cloves, cumin seeds, chopped onion and cook til they are slightly brown at the edges. Add salt, turmeric powder, ginger garlic paste and saute.
  • Add cleaned lamb pieces and cook for some time. Then add chili powder, coriander powder, cumin powder and mix it. Add water and cook for 20-30 minutes till lamb is 90% cooked (You can also cook lamb in a pressure cooker).
  • Add green chilies, coconut powder and pepper powder, coriander leaves and cook for another 10 minutes till the sauce is thickened. Serve hot with rice, roti or naan by sprinkling coriander leaves on top.

Fire Cider

An immune-boosting health tonic

Ingredients
  

  • 1/2 C Ginger Root peeled and grated
  • 1/2 C Horseradish Root peeled and grated
  • 1 ea Onion chopped
  • 10 clove Garlic chopped
  • 1 ea Lemon zested and juiced
  • 1 ea Orange zested and juiced
  • 2 Tbsp Rosemary
  • 1 Tbsp Turmuric Powder
  • 1 ea Cinnamon Stick
  • 1/4 tsp Cayenne Powder
  • 1 Qt Apple Cider Vinegar
  • 1/4 C Honey raw

Instructions
 

  • Add ginger, horseradish, onion, garlic, jalapeño peppers, lemon zest and juice, orange zest and juice, rosemary, turmeric, cinnamon stick, and cayenne powder into quart-sized glass jar.
  • Pour apple cider vinegar in the jar until all the ingredients are fully covered and the vinegar reaches the top of the jar. You want to be sure all the ingredients are covered to prevent spoilage.
  • Use a piece of natural parchment paper under the lid to keep the vinegar from touching the metal, or use a plastic lid if you have one.
  • Shake jar to combine all the ingredients and store in a dark, cool place for 4-6 weeks, remembering to shake the jar a few seconds every day.
  • After one month, use a mesh strainer or cheesecloth to strain out the solids, pouring the vinegar into a clean jar. Be sure to squeeze out as much of the liquid as you can.
  • Add honey to the liquid and stir until incorporated.
  • Taste your fire cider and add more honey if needed until you reach your desired sweetness.
  • Store in a sealed container in the refrigerator or in a cold, dark place.
  • Drink 1-2 Tablespoons when needed.
  • optional add-ins like cinnamon, orange and grapefruit.

Ingredients
  

  • 1.5 lb Ground Beef
  • 2 ea Egg
  • .5 C Bread Crumbs italian
  • 1/3 C Parmesan Cheese grated (plus 4 Tbsp)
  • 3 Tbsp Garlic Paste
  • 2 tsp Herb Paste
  • .25 C Olive Oil extra virgin
  • 28 oz Peeled Tomatoes italian
  • .25 C Tomato Paste
  • 18 ea Bread Rolls

Instructions
 

  • In a large bowl, mix ground beef, eggs, and breadcrumbs, 1/3 C parmesan, 1 Tbsp garlic paste, 1 tsp herb paste, salt and pepper. Shape into 18 meatballs
  • In a large skillet, heat 1/4C olive oil over medium heat. Add meatballs in batches and cook, turning occasionally until browned. Remove to plate and wipe skillet.
  • Add remaining 2 Tbst olive oil. Stir in tomato paste and remaining garlic paste, remaining herb paste and tomatoes. Salt and pepper to taste. Bring to a simmer.
  • Add meatballs to sauce. Cover and cook, stirring occasionally, 20 minutes or until meatballs are cooked through.
  • Place meatball in each roll with a small amount of sauce. Sprinkle with remaining parmesan and serve.

Buffalo Chicken Zucchini Boats

Ingredients
  

  • 4 ea zucchini
  • 1 lb ground chicken
  • .5 C buffalo wing sauce
  • 1 C mozzarella cheese shredded

Instructions
 

  • Preheat oven to 400 degrees F. Spray a 9×13 inch baking dish with cooking spray
  • Place a large non-stick skillet over medium-high heat. Add the chicken and break it apart witha wooden spoon. Cook for 7-9 minutes, until the chicken is cooked through, stirring occasionally
  • Remove the skillet from the heat. Stir in the buffalo wing sauce.
  • As the chicken cooks, cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds andcenter out of each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in thebaking dish cut-side up.
  • Spoon the chicken mixture into the zucchini boats. Sprinkle the zucchini evenly with thecheese
  • Cover the baking dish with foil. Bake for 35 minutes.

Pickled Onions

Ingredients
  

  • 2 red onion
  • 1 C apple cider vinegar
  • 1 C white vinegar
  • 2 C water
  • 1/3 C sugar
  • 2 tsp salt

Instructions
 

  • Thinly slice the onions. Place in jar.
  • Heat the vinegar, water, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool and pour over the onions. Store in the fridge.

Ingredients
  

  • 2 Qt Gooseberry Fresh
  • 6 C Sugar
  • 6 fl oz Pectin

Instructions
 

  • Sterilize jars and lids in boiling water for at least 10 minutes. 
  • Remove blossom and stem ends from gooseberries. Force berries through food mill. Measure 4 cups of the berry mash into a large pot. Stir in the sugar. Bring to a full rolling boil over high heat, and boil hard for 1 minute, stirring constantly. Remove from heat, and stir in pectin at once. Skim off any foam with a large metal spoon.
  • Take turns with skimming foam, and stirring the berry mixture for 5 minutes to let it cool slightly.
  • Ladle into hot sterile jars, leaving 1/4 inch headspace
  • Process in a boiling water bath for 10 minutes.

Ingredients
  

  • 1 Gallon Milk Whole
  • 6 oz Yogurt plain, greek

Instructions
 

  • Pour milk into instant pot and place lid on, leaving vent open. Using the yogurt button, select boil. Wait for cycle to complete.
  • Remove lid and allow to cool to approximately 105 degrees F.
  • Whisk in 6 oz starter yogurt
  • Place lid back on, leaving vent open. Using the yogurt button, select 14 hours, and wait for cycle to complete
  • Strain new yogurt through a tea towel/muslin/linen to desired consistency.
  • Jar and refrigerate.

Ingredients
  

  • 2 lb Pork Sausage OldFolks Spicy Medium
  • 1 ea Yellow Onion diced
  • 4 ea Garlic Clove minced
  • 1 Tbsp Olive Oil
  • 1.5 C Water
  • 6 oz Tomato Paste
  • 15 oz Tomato Sauce
  • 1 tsp Fresh Basil chopped
  • 1 tsp Fresh Thyme chopped
  • 1 tsp Fresh Oregano chopped
  • 1 tsp Fresh Parsley chopped
  • .5 tsp coriander ground

Instructions
 

  • In large sauce pan on medium high heat, combineoil, garlic, and onion until onions begin to sweat.
  • Add water and pork sausage and, utilizing a potato masher, mash sausage to desired consistency. Bring to boil allowing sausage to fully cook.
  • Stirin tomato paste and reduce heat to simmer or a low boil.
  • Stirin tomato sauce and seasonings.
  • Maintain a low boil to reduce sauce to desired consistency.
