Ingredients
  

  • Extra virgin olive oil
  • 1 large yellow onion chopped
  • 2 green peppers chopped
  • 2 garlic cloves chopped
  • 1 tsp ground coriander
  • 1 tsp sweet paprika
  • 1/2 tsp ground cumin
  • Pinch red pepper flakes optional
  • Salt and pepper
  • 6 medium tomatoes chopped (about 6 cups chopped tomatoes)
  • 1/2 cup tomato sauce
  • 6 large eggs
  • 1/4 cup chopped fresh parsley leaves
  • 1/4 cup chopped fresh mint leaves

Instructions
 

  • Heat 3 tbsp olive oil in a large cast iron skillet. Add the onions, green peppers, garlic, spices, pinch salt and pepper. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
  • Add the tomatoes and tomato sauce. Cover and let simmer for about 15 minutes. Uncover and cook a bit longer to allow the mixture to reduce and thicken. Taste and adjust the seasoning to your liking.
  • Using a wooden spoon, make 6 indentations, or “wells,” in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each indention.
  • Reduce the heat, cover the skillet, and cook on low until the egg whites are set.
  • Uncover and add the fresh parsley and mint. You can add more black pepper or crushed red pepper, if you like. Serve with warm pita, challah, or crusty bread of your choice.

Eggs in Tomato Sauce with Chickpeas & Spinach

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 4 cups baby spinach chopped (about 5 ounces)
  • 4 cloves garlic sliced
  • 2 cups tomatoes crushed, canned
  • 15 oz chickpeas canned, rinsed
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • 4 eggs large
  • 1 tablespoon chopped fresh thyme
  • ½ teaspoon ground pepper

Instructions
 

  • Heat oil in large skillet over medium heat. Add spinach and garlic. Cook, stirring, until the spinach has wilted and the garlic is beginning to brown, about 2 minutes.
  • Reduce heat to medium-low. Add tomatoes, chickpeas, cream and salt. Adjust heat to maintain a simmer. Crack an egg into a small bowl, taking care not to break the yolk. Make a well in the sauce roughly large enough to hold the egg and slip it in so that the yolk and most of the white is contained (some white may spread out). Repeat with the remaining eggs, evenly spacing them around the pan. Sprinkle the sauce with thyme; cover and cook until the eggs reach desired doneness, 6 to 8 minutes for medium-set. Remove from the heat and sprinkle with pepper.

Mushroom Cream Sauce

Mushroom Cream Sauce

Ingredients
  

  • 2 tbsp unsalted butter
  • 1/2 tbsp olive oil
  • 10 oz mushrooms sliced
  • Pinch of salt and pepper
  • 2 garlic cloves minced
  • 1/4 cup white wine or rose dry
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan
  • 1 tsp thyme

Instructions
 

  • Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and cook until golden brown
  • Just before they’re done, add the garlic and a pinch of salt and pepper. Cook until garlic is aromatic
  • Deglaze pan with white wine – it will sizzle!
  • Add broth, cream and Parmesan. Stir, then lower heat to medium so the sauce is simmering
  • Stir occasionally and simmer for 2 – 3 minutes until it thickens
  • Stir in thyme, salt and pepper to taste

Black Beans and Rice

Ingredients
  

  • 1/4 cup olive oil
  • 2 onions finely chopped
  • 2 green bell peppers chopped
  • 3 garlic cloves chopped
  • 4 bay leaves
  • 1 tablespoon ground cumin
  • 2 cups long-grain white rice
  • 4 14-ounce cans black beans, drained and rinsed
  • 2 14-ounce cans diced tomatoes with green chiles drained
  • 2 cups water
  • 1/4 cup apple cider vinegar
  • Kosher salt and freshly ground black pepper

Instructions
 

  • Heat a large pot over medium-high heat and add the oil. Stir in the onions, peppers, garlic, bay leaves and cumin. Stir and cook for 8 minutes.
  • Stir in the rice, black beans, tomatoes, water, vinegar and salt and pepper. Bring to a boil, cover and reduce heat to low. Cook for about 40 minutes or until the rice is tender. Serve hot.

Lamb Burgers

Lamb Burgers

Ingredients
  

  • 1 pound minced lamb shoulder
  • 2 red onions 1 grated and 1 cut into rings
  • 5 garlic cloves finely crushed, divided
  • 5 tablespoons fresh mint finely chopped, divided
  • 3 teaspoons ground coriander
  • 1 teaspoon Dijon mustard
  • Mint Mayonnaise

Instructions
 

  • In a bowl, mix together the minced lamb with the grated onion, 3 minced garlic cloves, 4 tablespoons of chopped mint, ground coriander, and Dijon mustard.
  • Form the mixture into 4 burger patties and then chill them in the fridge until they are ready to cook
  • Preheat the grill on high, lightly oil the lamb patties, and then cook for about 4 minutes each side.
  • Place the halved burger buns under the grill for 30 seconds to 1 minute, until they are lightly toasted.
  • Spread a little of the mayonnaise sauce on the burger bun, top with a burger patty, a few slices of red onion, some more of the mayonnaise sauce, and some salad leaves.

  • 8 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 2 clove garlic minced
  • 1 tablespoon mint chopped
  • 1 pinch paprika
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh parsley finely chopped

Instructions
 

  • In a clean bowl, mix together the mayonnaise with the lemon juice, the two remaining minced garlic cloves, a pinch of paprika, the remaining tablespoon of chopped mint, parsley, and dill. Refrigerate this sauce until ready to use.

Chocolate Chip Cookies

Ingredients
  

  • 1 cup salted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 cups chocolate chips 12 oz

Instructions
 

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.
  • In a medium bowl mix flour, baking soda, baking powder and salt. Set aside.
  • Cream together butter and sugars until combined.
  • Beat in eggs and vanilla until light (about 1 minute).
  • Mix in the dry ingredients until combined.
  • Add chocolate chips and mix well.
  • Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.
  • Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.
  • Let them sit on the baking pan for 5 minutes before removing to cooling rack.
