Old-Fashioned Beef Stew

Ingredients
  

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon freshly ground pepper
  • 1 pound beef stewing meat trimmed and cut into 1-inch cubes
  • 5 teaspoons vegetable oil
  • 2 tablespoons red wine vinegar
  • 1 cup red wine
  • 3 1/2 cups beef broth homemade or low-sodium canned
  • 2 bay leaves
  • 1 medium onion peeled and chopped
  • 5 medium carrots peeled and cut into 1/4-inch rounds
  • 2 large baking potatoes peeled and cut into 3/4-inch cubes
  • 2 teaspoons salt

Instructions
 

  • Combine flour and pepper in a bowl, add beef and toss to coat. Heat 3 teaspoons oil in a large pot. Brown beef a few pieces at a time, about 5 minutes per batch, adding more oil as needed.
  • Remove beef. Add vinegar and wine to the pot and cook over medium-high heat, scraping up browned bits. Add beef, broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
  • Cover and cook, skimming broth occasionally, until beef is tender, about 1 1/2 hours. Add onions and carrots and simmer covered 10 minutes. Add potatoes and simmer about 30 minutes more, until vegetables are tender. Add broth or water if dry. Season with salt and pepper to taste.

Loaded Mashed Potato Soup

A quick creamy potato soup made with prepared mashed potatoes, chicken stock, Greek yogurt, dill, cheddar and bacon.

Ingredients
  

  • cooking spray
  • 3/4 cup onion chopped
  • 3 cloves garlic minced
  • 1 thyme sprig
  • 1 25-ounce package unsalted chicken stock
  • 1/4 teaspoon freshly ground black pepper
  • 1 24-ounce package refrigerated mashed potatoes such as Simply Potatoes
  • 1/4 cup plain 2% reduced-fat Greek yogurt
  • 2 tablespoons fresh dill chopped
  • 1/3 cup green onion tops sliced
  • 1.5 ounces sharp cheddar cheese shredded, about 1/3 cup
  • 3 bacon slices cooked and crumbled

Instructions
 

  • Heat a Dutch oven over medium heat and coat with cooking spray. Add onion and cook 8 minutes or until tender, stirring frequently. Add garlic and thyme and cook 2 minutes. Add stock and simmer 20 minutes. Remove thyme sprig.
  • Blend half the stock mixture until smooth, venting the blender lid safely; repeat with remaining mixture.
  • Return stock mixture to pan. Add pepper and mashed potatoes, whisking until combined. Bring to a simmer and cook 5 minutes.
  • Remove from heat and stir in yogurt and dill. Ladle into bowls and top with green onions, cheddar and bacon.

  • 1 lb kielbasa
  • 8 potatoes cubed
  • 1 onion chopped
  • 3 medium carrots sliced
  • 14 oz condensed milk
  • 2 cups cheddar cheese shredded
  • 6 beef or chicken bouillon cubes
  • water as needed
  • salt and pepper to taste

Instructions
 

  • Place sausage, potatoes, onion, carrots and bouillon in a slow cooker. Cover with water.
  • Cook on low for 4–6 hours.
  • During the last 5 minutes, add milk and cheese. Season with salt and pepper to taste.

  • 2 cups self-raising flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 12 oz ale beer Sam Adams, etc.
  • 2 Tbsp unsalted butter melted

Instructions
 

  • Preheat oven to 375°F. Butter a loaf pan and set aside.
  • In a large bowl, combine flour, sugar and beer. The mixture will be sticky.
  • Pour into loaf pan and bake 45–50 minutes.
  • During the last 3 minutes of baking, remove from oven, brush the top with melted butter, and return to the oven.

  • 1 head green cabbage shredded
  • 2 carrots grated
  • 1 red onion thinly sliced
  • 2 green onions white and green parts, chopped
  • 1 fresh red chile sliced
  • 1 1/2 cups mayonnaise
  • 1/4 cup Dijon mustard
  • 1 tablespoon cider vinegar
  • 1 lemon juiced
  • 1 pinch sugar
  • 1/2 teaspoon celery seed
  • hot sauce several dashes
  • kosher salt and freshly ground black pepper to taste

Instructions
 

  • Combine cabbage, carrots, red onion, green onions and chile in a large bowl.
  • In another bowl, stir together mayonnaise, mustard, vinegar, lemon juice and sugar.
  • Pour dressing over cabbage mixture and toss gently to mix.
  • Season with celery seed, hot sauce, salt and black pepper. Chill for 2 hours before serving.

Ingredients
  

  • 12 medium red potatoes
  • 1 medium onion finely chopped
  • 3 hard-cooked eggs chopped
  • 2 dill pickles finely chopped
  • 2 Tbsp fresh parsley snipped
  • 1/4 cup chicken broth
  • 3/4 cup mayonnaise or salad dressing
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup sugar
  • 1/4 tsp garlic powder
  • 2 tomatoes cubed
  • 6 strips bacon cooked and crumbled

Instructions
 

  • Cook potatoes in boiling salted water until tender. Drain and cool slightly.
  • Peel and slice potatoes; combine with onion, eggs, pickles and parsley in a large salad bowl. Set aside.
  • Heat chicken broth until warm and remove from heat. Add mayonnaise, salt, pepper, garlic powder and sugar; mix until smooth.
  • Pour over potato mixture and mix lightly. Cover and chill.
  • Just before serving, gently stir in tomatoes and bacon.

  • 1/2 cup butter melted
  • 1 can (10 oz) cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup onion chopped
  • 2 cups cheddar shredded
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
  • Mix all ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.

Ingredients
  

  • 3 Tbsp butter
  • 2 Tbsp flour
  • 1/2 tsp salt
  • 2 cups milk
  • 2 cups sharp cheddar shredded
  • 1 pkg (7 oz) elbow macaroni cooked and drained

Instructions
 

  • Preheat oven to 350°F.
  • Melt butter in a large saucepan on low heat. Add flour and salt; mix well. Cook 2 minutes or until bubbly.
  • Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly.
  • Reduce heat to low; simmer 3–5 minutes or until thickened. Add 1 1/2 cups cheese and cook until melted, stirring constantly.
  • Add macaroni and mix lightly. Spoon into a 1 1/2-quart casserole and sprinkle with remaining 1/2 cup cheese.
  • Bake 20 minutes or until heated through.

  • 1 1/2 pounds fish salmon, hoki, tilapia, etc.
  • lemon pepper to taste
  • garlic powder to taste
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 1/3 cup extra-virgin olive oil

Instructions
 

  • Stir together all ingredients except the fish fillets.
  • Place fillets and marinade in zip-top bags, turning to coat, and refrigerate for at least 2 hours.
  • Grill fish for 6 minutes per side over medium heat or until done.

Ingredients
  

  • 1 cake yeast
  • 1 Tbsp sugar
  • 1/4 cup lukewarm water
  • 6 cups flour
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 2 cups milk scalded and cooled to lukewarm
  • 1 cup shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup raisins
  • 1 cup currants source parenthetically says blackberries
  • 1/2 cup blanched almonds
  • 1/2 cup chopped citron source parenthetically says lemon
  • 1 1/2 tsp lemon extract

Instructions
 

  • Dissolve yeast and 1 tablespoon sugar in lukewarm water. Cover and allow to rise.
  • Cream shortening and 1 1/4 cups sugar. Add eggs and cooled scalded milk, alternating with flour sifted with salt and nutmeg. Add yeast mixture.
  • Knead until smooth. Add fruits and flavorings. Cover and let dough rise to double. Knead again.
  • Shape dough into ropes about 1 1/2 inches in diameter. For each stollen make one rope 3 feet long and two ropes 2 1/2 feet long. Braid, bringing the braid to a point at either end.
  • Place braid on a greased cookie sheet. Bake at 400°F for 25 minutes or until brown.

Source describes this as German Christmas bread and explains its traditional criss-cross/swaddling shape.
